Cantaloupe Salsa

Ingredients:

4 cups cantaloupe, diced

1 medium onion, diced
1 jalapeno pepper, seeded and chopped 
1/3 cup olive oil or other liquid oil
1/3 cup apple cider vinegar or white vinegar
1 teaspoon salt (or to taste)
1/2 teaspoon garlic powder

Instructions:
1)  Mix cantaloupe, onion and diced pepper together in a bowl

2)  In a small bowl, whisk together the olive oil, vinegar, salt and garlic powder.

3)  Drizzle the dressing over the cantaloupe.

4)  Chill and serve.

Great as a side dish with grilled chicken or fish.
